Recipes 2011

Sometimes I find myself stuck in a rut with regards to my cooking. I seem to cook the same meals over and over again, and I forget about all those other meals I used to make. So, in an effort to avoid the danger of boring cooking, I have an idea. I will share one of my recent most favorite recipes with you, in exchange for you sharing one with me! Just leave a comment with your favorite recipe...then we will all have lots of fun and new meals to make for our families. Thanks!

After having made pea and lentil soups more times than I wish to count, I finally perfected my recipe and settled with a delicious soup that I think you will enjoy as well.

Lentil Soup (with secret ingredients)
1/2 red onion
garlic, minced
1 T. olive oil
1 bag lentils (rinsed)
2 cans diced tomatoes (fire-roasted with garlic)
4 c. organic chicken broth
3 c. water
3 strips bacon, cooked and crumbled
1 t. garam masala
1 t. salt

Saute onion and garlic (to taste, I used about a tablespoon) in olive oil. Once browned, add the tomatoes, salt and garam masala. Add broth and water; bring to a simmer and add lentils. Crumble bacon on top, stir well. Let simmer covered for about 45 minutes until lentils are soft.

    Ingredients:

    1 (14 1/2 ounce) Can of Diced Tomatoes with Garlic and Onion (undrained)

    1 (11 1/2 ounce) Can Condensed Bean and Bacon Soup (undiluted)

    3 Cups Water

    1 (16 ounce) Bag of Frozen Italian Style Veggies *

    3/4 Teaspoon Dried Italian Seasoning

    1/4 Teaspoon Ground Black Pepper

    1/2 (9 ounce) Package of Fresh Cheese Tortellini

    1/4 Cup Grated Parmesan Cheese

    Directions:
    1. Combine the first 6 ingredients in a 4 quart saucepan. Cover and bring to a boil over high heat.

    2. Add the tortellini, reduce heat to medium Continue cooking for around 7 minutes or until pasta and veggies are tender.

    3. Stir in the grated cheese.

    This has under 250 Calories per serving, costs about $8.00 to make and will last you a couple of meals. Super yummy. Xox
